WHERE IS YOUR MATCHA FROM?
Our matcha is sourced from a single farm on the beautiful island of Kyushu, Japan. The farm is JAS certified organic. Kyushu is known for its nutrient-rich volcanic soil, which gives our matcha its beautiful flavour and vibrant colour. Our matcha is from the first spring harvest, and is ground to order to ensure freshness and flavour.

WHY IS MATCHA GOOD FOR YOU?
While we love matcha for its sense of ritual, it also has many health benefits. Made of the ground leaves of the green tea (Camellia sinensis) plant, it’s full of antioxidants. As you’re consuming the whole ground leaf from the first spring growth, it contains about three times more antioxidants than regular high quality green tea. A cup of matcha may provide the same amount of antioxidants as 10 cups of green tea. It also has a nice caffeine boost that is slower-release than coffee, meaning all of the energy minus the jitters.

IS MATCHA CAFFEINATED?
Matcha does contain caffeine, although significantly less than coffee. Matcha also contains a compound called L-theanine, which alters the way our bodies are effected by caffeine. This means a slower release of energy, a greater sense of focus, and none of the jittery effect that can sometimes come from caffeine consumption.

WHAT DOES MATCHA TASTE LIKE?
Premium, ceremonial grade matcha is vastly different to the culinary grade that is frequently used commercially. If you’ve tried matcha before and haven’t liked it, we definitely think its worth trying a premium matcha powder. With a bright, verdant colour and strong yet well-balanced flavours, matcha has an earthy, umami taste.

HOW DO I PREPARE MATCHA?
For a ceremonial matcha, matcha is often prepared into a thin tea called usucha. Scoop 2-2.5 grams of matcha into a small bowl. Use 40mL of 80°C water to whisk. Add an additional 40mL of 80°C water. Be careful not to use boiling water as this can burn your matcha and will affect the flavour. If you prefer a matcha latte, instead of additional water, add steamed milk of choice. Sweeten to taste.

HOW DO I STORE MATCHA?
Matcha is highly sensitive to light and heat so we recommended storing it in a cool, dark place. Make sure you seal your pouch or tin carefully after opening. During the warmer seasons, you can store your matcha in the fridge to preserve its freshness and increase shelf life. Once you open your tin, we recommend using it within a couple of months for maximum freshness and quality. You’ll notice that if it’s left in the light or exposed to air, it can lose some of its vibrant green colour and the flavour profile won’t be as complex.
